This is a pork tenderloin that I quick marinated in olive oil, salt and pepper, blended chipotle peppers and cinnamon. I cooked it to about medium over the hot side of our grill to lock in all of the juices. And over the top is our SlyFox IPA beer sauce that Dave the “Sauce Boss” made up one night, I’ll include the recipe for the sauce at the end. And to compliment the meat I made a side of garlic and lemon green beans with mashed sweet potatoes.
IPA beer sauce:
3 ounces of any IPA beer
Blue cheese crumbles
Heat the garlic and butter in a small sauce pan until the garlic begins to brown, add in the beer and turn up the heat to cook the alcohol off. After about a minute add in equal amount of heavy cream as you did beer. Once the cream and beer begin to bubble add handful of blue cheese crumbles and stir until melted and combined.
