Dinner night with my friend Max and her family. Oyster Rockefeller was the starter for the night. I used to not be an oyster fan until this night.
Clean oysters and place in a large stockpot. Pour in enough water to cover oysters; bring to a boil. Remove the pot from heat and drain, let the oysters cool on a baking pan. When cooled break the top shell off of each oyster. Preheat oven to 450. Cut cooked bacon into pieces just big enough to cover the top of the oyster. And cook some whole leaf spinach in a sauce pan with butter and garlic.
Once the oysters have cooled sprinkle a mix of bread crumbs, parmesan cheese, salt and pepper. Top with the spinach and bacon slices. Place these in the oven on a baking sheet being sure to not crowd the pan. Bake for about 10 minutes or until the cheese begins to brown. Remove from oven and enjoy. Be careful though the shells will be hot for quite some time!
